Ethiopian: Timatim (Tomato and Cucumber Salad)

(makes 4 servings)
Ingredients:
- 1 lime, juiced
- 1 jalapeno, chopped
- 1 red onion diced
- 2 tomatoes, diced
- 2 mini cucumbers, chopped
- ΒΌ cup ginger paste (approx 2 oz)
- Salt to taste
- 4 tablespoons olive oil
Procedure:
- Combine all ingredients in a bowl
- Mix well
- Adjust for salt
- Serve on injera flatbread
